Yipes! Stripes!

A savory, yet refreshing Margarita riff that highlights some late summer garden ingredients, including the delicious Green Zebra tomato 💚 🦓🌶 The muddled green zebra tomato brings a bit of fresh, tart flavor with a hint of spice that pairs well with the smoke notes in the mezcal and the fresh chile flavor of the vodka. The Manzanilla sherry contributes a touch of saline and green apple while also drying out the drink a bit. The addition of the blanc vermouth with a bit of strawberry liqueur introduces another flavor that complements the tomato while rounding out the drink. The lime juice balances the acidity while the bitters bring some black pepper and bay leaf notes and a pinch of salt makes the flavors pop
Muddle 1 green zebra tomato (top removed and quartered; can sub 2-3 good heirloom cherry tomatoes to get relatively close) in fat .25 oz Strawberry Liqueur
Add:
1 oz Mezcal (Espadin variety)
.5 oz Green Chile Vodka (St George makes an excellent bottle or you can infuse your own)
.5 oz Manzanilla Sherry (Bodegas Yuste, Lustau, La Guita, etc)
.5 oz Fresh Lime Juice
Scant .5 oz Blanc Vermouth (Dolin, Carpano, Bordiga)
1 dash Bitter End Chesapeake Bay Bitters
Pinch of salt
Shake with ice and strain into a chilled double rocks glass with a few ice cubes. No garnish (though a hulled strawberry would look nice if handy)
