A bright, refreshing riff on the Tiki classic Jet Pilot with aquavit and a funky rum to pair with the citrus and baking spice notes✈️🗿🏝🍹 The duo of aged and unaged aquavits contribute notes of star anise, dill, caraway, and a touch of baking spice while the lightly aged blend of column and pot still rums adds some notes of citrus and funk that work nicely with the bright, tart citrus notes from the grapefruit and lime juice. The falernum and alpine liqueur add notes of clove, cinnamon, and other baking spices while the trio of bitters boost the notes of star anise (Peychaud’s) and grapefruit (both the hop bitters and Jamaican bitters with hibiscus and grapefruit zest) 1 oz Unaged Aquavit (bottle like Krogstad has prominent star anise notes that are nice with the grapefruit) .75 oz Aged Aquavit (Linie is best; notes of caraway and subtle baking spice) .75 oz Lightly Aged Rum (funkier option like Foursquare Probitas or Wray & Nephew are best) .5 oz Fresh Grapefruit Juice .5 oz Fresh Lime Juice .5 oz Falernum (Rum-based liqueur from Barbados with notes of clove and lime zest) .5 oz Alpine Liqueur (Leopold Brothers Three Pins has nice notes of cinnamon and other spices) 1 dash Bittercube Jamaican #2 Bitters (Grapefruit and hibiscus) 1 dash Bittercube Door County Hop Bitters 1 dash Peychaud’s Bitters 1 dash Absinthe or Herbsaint Shake with ice and strain into a double rocks glass filled with crushed ice.
