A fruity, refreshing warm weather highball from ace bartender Caitlin Laman (formerly of SF’s Trick Dog, Chicago’s Mezcaleria Las Flores; currently Chicago’s Ace Hotel)
The fresh fruit flavors of the strawberry and lemon are complemented by the intriguing vanilla/leather/tobacco notes of the rooibos tea and the oak spice, caramel, and subtle fruit notes of the armagnac
1.5 oz Armagnac (French brandy that is a bit more rustic than Cognac and originates from an adjacent region; can sub VSOP cognac if you can’t find it near you)
.75 oz Fresh Lemon Juice
.75 oz Simple Syrup (1:1)
2 oz brewed Rooibos Tea, cooled
2 strawberries, hulled and quartered
Shake with ice, double strain into chilled Collins glass with a few ice cubes. Garnish with a lemon wheel
