Water Lilies

A cool and refreshing riff on a Daiquiri/Sour that is great for the start of summer 🥒🍋☀️
The lime zest, agave, and green notes in the unaged blanco tequila combine with the green chile notes in the infused vodka and the green apple and white wine notes of the manzanilla sherry to create a base that nicely accentuates the cooling notes of cucumber and green apple along with the refreshing citrus zip of the lime and lemon. The kiwi and simple syrup add body and nuanced sweetness. Great in the back yard or after taking a dip in the pool
Muddle 3-4 cucumber wheels in .25 oz Simple Syrup (equal parts granulated sugar and water; stir until dissolved) and a pinch of salt
Add:
1 oz Unaged Blanco Tequila (El Tesoro, Tapatio, Fortaleza)
.5 oz St George Green Chile Vodka (can also infuse your own; let me know if you want a recipe)
.5 oz Manzanilla Sherry (dry Sherry with notes of green apple; Hidalgo, La Guita, Bodegas Yuste, etc)
.5 oz Fresh Lemon Juice
.25 oz Fresh Lime Juice
.25 oz Kiwi Syrup (equal parts kiwi juice and granulated sugar; stir until dissolved)
1/2 Tsp Green Apple Liqueur (Verjus would be a good sub; maybe add slightly less citrus in that case)
1 dash Absinthe
1 dash Bittercube Truth Cucumber Bitters
Shake with ice and double strain into a chilled coupe. Garnish with a cucumber wheel
