A comforting Mai Tai/Tiki punch riff from Keely Sutherland with notes of banana, brown sugar and subtle warming spices and smoke 🍹🍌🍋 The mix of a blended aged rum and blended scotch results in a base with notes of brown sugar, molasses, cereal grains, honey, and subtle smoke that works well with the roasted banana flavor of the liqueur. Fresh lemon juice helps balance the drink with some citrus tang and the spice+ dark chocolate notes the bitters and a pinch of salt help balance the flavors 1 oz Blended Aged Rum (Diplomatico Reserva Exclusiva is a good choice) 1 oz Blended Scotch (Compass Box Great King St Glasgow Blend has a nice subtle peat note) .5 oz Fresh Lemon Juice .5 oz Banana Liqueur (Giffard or Tempus Fugit) .5 oz Rich Simple Syrup (2 parts unrefined sugar of choice to 1 part water; stir until sugar has dissolved) 2 dashes Bittermens Xocolatl Mole Bitters Pinch of salt Shake with ice and strain into a chilled double rocks or Mai Tai glass filled with crushed ice.
