Un Chien Andalusia

A dangerously enjoyable low ABV sipper inspired by the Trident and Martini with a Spanish accent
The peach flavor from the bit of liqueur melds with the soft peat from the scotch and the subtle nutty notes in the fino sherry in a very pleasant way while the lighter alcohol sherry and vermouth base make for a nice, light drink
1.5 oz Fino Sherry (think pleasant, dry white wine with subtle nutty finish)
.5 oz Sherry Aged, Blended Scotch (I used a Douglas Laing blend, but Great King Street Glasgow Blend could be a good sub)
.5 oz Blanc/Bianco Vermouth
.25 oz Peach Liqueur (Giffard is a favorite, but Mathilde, Rothman & Winter, etc can sub)
2 dashes Crude Rizzo Bitters (can probably sub another savory bitters option)
Stir with ice and strain into a chilled coupe. Garnish with a lemon twist
