A nuanced Old Fashioned variation with tropical accents from NYC cocktail lodestar, Death & Co 🥃🏝🍍🍫 The honey, pear, and subtle peat notes of the single malt scotch integrate beautifully with the tropical fruit basket and funk notes from the Puerto Rican and Jamaican Overproof runs while the pineapple liqueur adds additional tropical flavor and a bit of Creme de cacao and chocolate mole bitters bring a subtle spiced chocolate note. The essential oils from the lemon twist add a nice brightness 1 oz Campbelltown Scotch (Springbank 10, Kilkerran 12, etc) .75 oz Blended Aged Column Still Rum (Ron del Barrilito 3 Star from Puerto Rico brings great tropical fruit notes) .25 oz Jamaican Overproof Rum (Smith & Cross, Worthy Park Overproof, Rum Fire, etc) Tsp Pineapple Liqueur or Gomme Syrup (Giffard for liqueur; Small Hand Foods for syrup) 1/2 Tsp Creme de Cacao (Tempus Fugit or Marie Brizard) 2 dashes Bittermens Xocolatl Mole Bitters Stir with ice and strain into a chilled double rocks glass with a large ice cube. Garnish with a lemon twist (expressing essential oils over drink first)
