Trembling Bell

An elegant, late summer/early fall riff on a Manhattan from Thomas Waugh during his time at Death & Co. one of my absolute favorites over the years The chamomile notes in the infused Old Overholt are complemented by the mellow cereal grain notes in the Irish Whiskey and the floral, honeyed notes of both are boosted by the Aperitif and touches of honey and peach liqueur are added to give intriguing hints of sweetness 1.5 oz Chamomile-Infused Old Overholt (1/4 cup chamomile tea per 750 mL bottle for 90 minutes before straining out the tea) 1 oz Aged Irish Whiskey (the soft, honeyed notes in the Knappogue Castle 12 yr work great) .75 oz Cocchi Americano (white wine based aperitivo from Italy with hints of citrus peel and chamomile; can also sub Kina L’Avion) Teaspoon Peach Liqueur (Giffard) 1/2 teaspoon Honey Syrup (2 parts honey: 1 part warm water, stir until blended) Stir with ice and strain into a chilled coupe. Express the oils from a lemon twist over the drink before discarding the twist. No garnish
