A creamy, aromatic Tiki classic that is perfect for a sunny afternoon
The dual Jamaican rums provide a nice base with molasses notes and aromas of pineapple and ripe banana that pair nicely with the coconut cream and deep sweetness of the apricot liqueur while the lemon lightens and brightens the drink
1 oz Blended Lightly Aged Jamaican Rum (Appleton Signature is a good call)
1 oz Dark Rum (Coruba, Myers, etc)
1.5 oz Coconut Cream (mix equal parts of unsweetened coconut milk and 2:1 simple syrup with a pinch of salt; stir until blended)
1 oz Apricot Liqueur (Giffard or Rothman & Winter)
1 oz Fresh Lemon Juice
Shake with ice and strain into a Collins or Zombie glass filled with crushed ice. Garnish with a lemon wedge (and a cocktail umbrella turned inside out spearing the lemon if handy)
