A tropical, refreshing riff on a daiquiri from Chicago’s Tiki genius, Paul McGee and his bar, Lost Lake
The nuanced sweet-tart notes from the passion fruit and coconut mingle very nicely with the lime and combined tropical aromas and molasses notes in the rum to produce a flavor reminiscent of the most ideal “tropical” flavored popsicle
1.5 oz Aged Multi-Island Rum (Plantation 3 Star or Banks 5 Island are good choices, the pictured Cadenhead is gilding the lily a bit)
.5 oz Overproof Jamaican Rum (Rum Fire, Wray & Nephew, Smith & Cross all good options)
1 oz Fresh Lime Juice
.5 oz Passion Fruit Syrup (Small Hand Foods)
.25 oz Coconut Liqueur (Kalani)
Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Garnish with a lime wheel
