Three Little Birds

A funky, yet floral beer cocktail that successfully marries the traditional Jamaican Hibiscus Rum Punch and the deliciously bittersweet Cold In the Shadows The fruity, yet tart hibiscus from the IPA works very well with the tropical fruit notes in the Jamaican rum. The bittersweet notes from the bit of Campari boost the hibiscus flavor, the lime adds additional tartness while the salted honey syrup adds a bit of deep sweetness. The spice from the bitters ties everything together 2 oz Blended Lightly Aged Jamaican Rum (Appleton Signature is a good choice) .25 oz Campari (feel free to sub other red Aperitivo of choice) .5 oz Fresh Lime Juice .5 oz Honey Syrup (2 parts honey: 1 part warm water) 2 dashes Allspice Forward Bitters (Jerry Thomas’ Own Decanter or Degroff Pimento) Pinch of salt Shake with ice and strain into a chilled Collins glass with a few ice cubes. Top with 1.5 oz Hibiscus IPA (can also infuse regular with hibiscus blossoms or tea) #weekendtiki
