A bold, spicy Manhattan riff that has been slightly modified from the original spec by the esteemed Gary Regan 🤺 The heather, honey and touch of peat in the Highlands/Island Scotch marries beautifully with the bite of ginger from the liqueur (which also balances the booziness of the drink with a bit of sweetness) and the smoke from the mezcal rinse. The addition of lime bitters gives a subtle hint of acidity and juiciness that ties the flavors together 2 oz Orkney/Highlands/Islands Single Malt Scotch (Highland Park 12, Oban 12, or delicious island blend of single malts from Douglas Laing) .75 oz Ginger Liqueur (Domaine de Canton, King’s Ginger, Giffard) 1 dash Lime Bitters* (Scrappy’s; *omit if you want the original Gaz Regan spec) Stir with ice and strain into a chilled coupe that has been rinsed with Mezcal (can either swirl .25 oz before adding drink or spritz with atomizer on top of drink after straining).
