The Smoke Also Rises

A flavorful, bittersweet Hemingway Daiquiri riff from Orestes Cruz of Atlanta’s Empire State South
The classic combination of citrus and cane sugar in the lightly aged rum along with the tart citrus notes of the fresh lime and grapefruit juices is augmented by the bittersweet and smoke notes of the smoke rhubarb of the Amaro Sfumato while the maraschino liqueur adds a bit of funk and the simple syrup adds body (a cinnamon bark syrup substitution could also work nicely)
2 oz Lightly Aged Rum (Plantation 3 Star, Banks 5 Island, Cana Brava, Royal Standard, etc; feel free to add in .5 oz of funkier rum like a Probitas or an Agricole to kick up the funk)
.5 oz Fresh Lime Juice
.5 oz Fresh Grapefruit Juice (if available, the Oro Blanco variety offers more tart grapefruit flavors)
.25 oz Maraschino Liqueur (Luxardo, Maraska, etc)
.25 oz Simple Syrup (Cinnamon Bark Syrup would be a nice sub)
Shake with ice and strain into a chilled coupe. Garnish with a lime wheel
