The Highwayman

A robust, autumnal daiquiri/margarita variation from NYC’s excellent Slowly Shirley that shows agave spirits can work with the fall flavors of apple and pear 🍎🍐 The oak and subtle butterscotch notes in the reposado tequila work very well with the apple flavors in the bonded apple brandy and the pear flavors from the delicious eau de vie/brandy without introducing any unnecessary sweetness . The bit of mezcal gives an earthier/smoky background note that plays well with the deep sweetness of the maple syrup and the lime adds needed acidity while still allowing the other flavors to shine
1 oz Reposado Tequila
.5 oz Bonded Apple Brandy (Laird’s Bonded is great, can probably sub aged apple brandy or Calvados, but no need to go too fancy)
.25 oz Pear Brandy (St George makes easily my favorite, but there are a few other options)
.25 oz Mezcal
.75 oz Fresh Lime Juice
.5 oz Maple Syrup (if you can find Grade B, it has deeper maple sap flavor vs sugar)
Shake with ice and strain into a chilled coupe. No garnish
