The Great Concavity

A refreshing, slightly savory Martini riff that features pear, smoke, and a hint of vanilla 🍐
The mezcal lends hints of smoke and stonefruit to the excellent (yet dry) ripe Bartlett pear flavor from the eau de vie. The white wine and chamomile notes in the vermouth soften the edges of the drink and the liqueur lends a subtle complementary note of vanilla. The bitters lend some savory herb and spice notes
1.5 oz Pear Brandy/Eau de Vie (St George makes my favorite, but Clear Creek also makes a nice version)
.5 oz Mezcal (Espadin variety)
.5 oz Blanc/Bianco vermouth (Dolin/Bordiga/Carpano)
.25 oz Vanilla Syrup or Liqueur (Licor 43 or Giffard if the latter)
2 dashes Crude “Rizzo” Bitters (Rosemary, grapefruit peel, pink peppercorn)
Stir with ice and strain into a chilled coupe. Garnish with a lemon twist
