A refreshing, yet deeply flavored Sour/Collins variation from Jon Santer of East Bay stalwart Prizefighter The bourbon lends notes of oak, caramel, and baking spices that work well with the honey and peach flavors to provide a rich, nuanced flavor that is properly balanced by the bright, refreshing citrus. I also like to split the bourbon with a bit of rye to boost the spice notes a bit 1.5 oz Bourbon (if omitting rye below, add 2 oz) .5 oz Rye (version with higher proof and spice provides nice contrast with the richer bourbon; not required though) .75 oz Fresh Lemon Juice .5 oz Honey Syrup (1 part honey: 1 part warm water, stir until dissolved) .5 oz Peach Liqueur (Giffard, Massanez, etc) Shake with ice and strain into a chilled Collins glass with ice cubes. Garnish with a lemon wheel (a sprig of fresh mint would also make a great addition to the aroma of handy)
