The Cutter

A refreshing bittersweet riff on the Paper Plane from Alec Bales of Atlanta’s excellent Ticonderoga Club The baking spice and caramel notes in the bourbon and the medium bittersweet Amaro with notes of orange peel and cola work nicely with the juicy, bittersweet Campari and the tart lemon juice to create a drink that has initial richness that finishes with a juicier bittersweet flavor that has you craving the next sip. The splash of rich simple syrup and dash of Angostura help balance the richness and spice notes in the drink 1.25 oz Bourbon (EH Taylor Small Batch, St George Breaking and Entering, etc) .75 oz Campari (or other red aperitivo of choice) .5 oz Amaro CioCiaro (medium bittersweet Amaro from Italy with notes of cola and orange peel; Meletti or Amaro Montenegro could probably sub) .75 oz Fresh Lemon Juice .25 oz Rich Simple Syrup (2 parts unrefined sugar of choice to 1 part water; stir until dissolved) 1 dash Angostura bitters Shake with ice and strain into a chilled coupe.
