A funky, slightly savory take on a daiquiri
The grassy, funky agricole rhum is supplemented by the nutty, dry Fino sherry and rich pineapple with the Bay leaf and cayenne notes from the bitters bringing a bit of spice and the lime bringing acidity
1.5 oz Unaged Agricole Rhum
.5 oz Fino Sherry
.75 oz Fresh Lime Juice
.25 oz Pineapple Liqueur (Giffard Caribbean Pineapple is an excellent choice)
.25 oz Simple Syrup (1:1)
2 dashes Bitter End Chesapeake Bay Bitters (think the flavors in Old Bay)
Shake with ice and strain into a chilled coupe. Garnish with freshly ground black pepper
