A refreshing, layered Margarita riff from Shannon Tebay that highlights the surprisingly complementary flavors of carrot and coconut 🥃🥕🥥
The oak and baking spice notes imparted by barrel aging on the Anejo tequila combine with the earthy/savory accent in the carrot Eau de vie in outstanding fashion while the sweetness of both the carrot and coconut provide a nice contrast. A lowlands tequila with roasted agave acts more like Mezcal to impart some smoke and citrus zest notes that work well with the fresh lemon juice to brighten the drink and bring acidity while the preserved lemon and sumac notes in the Moroccan bitters helps bridge the flavors while adding a touch of spice
1 oz Anejo Tequila (Arte Nom, Siembra Azul Anejo, El Tesoro, etc)
.75 oz Lowlands Blanco Tequila (Siembre Valles Ancestral, Fuenteseca, Fortaleza)
.25 oz Carrot Eau de Vie (Reisetbauer makes an excellent bottle that opens with sweetness and then has savory earthy notes join in to finish)
Tsp Coconut Liqueur (Kalani)
.75 oz Fresh Lemon Juice
.5 oz Rich Simple Syrup (2 parts unrefined sugar of choice: 1 part water; stir until dissolved)
2 dashes Bitter End Moroccan Bitters
Shake with ice and strain into a chilled double rocks glass with a large ice cube. No garnish
