Sweet Sassy Molassey

A smooth yet spicy Corn n Oil riff with robust flavors and a nice finishing kick 🌶🥃 The molasses notes in the blackstrap rum bring a rich undertone to the caramelized sugar, oak, and vanilla notes in the Bajan rum. These bold flavors provide a nice backdrop for the sweet/tart notes of tamarind, the ghost pepper in the Caged Heat and the clove/lime zest notes in the Falernum. A splash of lime and lime bitters wake the drink up with a bit of tart zip and the Angostura bitters boost the complementary allspice and clove notes.
1.5 oz Aged Bajan (Barbados) Rum (Real McCoy 12 year is a great choice)
.5 oz Blackstrap Rum (Cruzan)
.25 oz Tamarind/Cardamom/Ghost Pepper syrup (Caged Heat; could sub reduced Tamarind Jarritos with some Habanero bitters)
.25 oz Falernum (Bajan rum-based liqueur with cloves and lime zest)
.25 oz Fresh Lime Juice
2 dashes Angostura Bitters
1 dash Scrappy’s Lime Bitters
