The blend of lightly aged Jamaican and aged column still rum adds notes of caramelized sugar and vanilla with some ripe tropical fruit aromas and the fresh lime juice helps balance out the rich flavors .75 oz Lightly Aged Jamaican Rum (Doctor Bird, Plantation Xaymaca, Appleton Signature) .5 oz Blackstrap Rum (Rum with stronger molasses notes; Cruzan makes a nice bottle) .25 oz Aged Column Still Rum (Chairman’s Reserve from St Lucia is a nice choice) .75 oz Campari (or other red aperitivo of choice) 1.5 oz Fresh Pineapple Juice (Trader Joe’s is decent sub if you can’t find fresh right now) .5 oz Fresh Lime Juice .5 oz Coconut Liqueur (Kalani) Shake with ice and strain into a chilled double rocks glass with a few ice cubes.
