Simulation Swarm

a bright, refreshing highball riff with notes of citrus, pear, vanilla and botanical/spice notes 🍹🍐🍋
The juniper and other botanical notes in the gin combine with the star anise/fennel notes in the unaged aquavit to form a base that complements the pear notes in the Eau de vie and sparkling water/tonic and the bright lemon juice. The falernum and a splash of Galliano add notes of clove/citrus zest and vanilla that complement the other flavors. Great for a warm day (or wishing one is coming)
1 oz London Dry Style Gin (Beefeater, Tanqueray, Four Pillars Rare Dry, etc)
.5 oz Unaged Aquavit (Scandinavian spirit; Krogstad has nice fennel/star anise notes that work well here)
.5 oz Pear Eau de Vie/Brandy (St George and Clear Creek both make excellent bottles)
.75 oz Fresh Lemon Juice
.5 oz Falernum (Liqueur from Barbados with clove and citrus zest notes; John D Taylor makes a nice bottle)
.25 oz Galliano (Italian liqueur with notes of vanilla, saffron, very subtle bittersweet notes)
Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz of pear or pear-pineapple sparkling water (Juice Shop pear-pineapple is great if in the Bay Area, LaCroix has a flavor that would be a good sub too). Garnish with a lemon wheel
