A refreshing, tropical beer cocktail overflowing with passionfruit, orange, and guava notes 🏝🍹 The tropical fruit, molasses, and caramelized sugar notes in the blend of rums provides a delicious foundation for the fruit flavors from the guava syrup, mandarin orange liqueur, and the passionfruit notes in the liqueur and tropical sour beer. The Pimm’s boosts the orange notes while adding some tea and spice notes and the lemon and sour beer help balance and brighten the drink 1 oz Blended Aged Demerara Rum (El Dorado 8 yr, Hamilton Demerara, etc) .5 oz Blended Aged Jamaican Rum (Worthy Park 10, Appleton Reserve, etc) .25 oz Overproof Dark Rum (Plantation OFTD) .25 oz Pimm’s #1 Liqueur (Citrus, tea, spice notes) .5 oz Fresh Lemon Juice .25 oz Guava Syrup (1/4 cup guava paste in cubes along with 1/2 C each granulated sugar and water on medium-low heat; stir until guava paste is incorporated and sugar has dissolved) .25 oz Passionfruit Liqueur or Syrup (Giffard for Liqueur; Small Hand Foods for syrup) Tsp Mandarin Napoleon Orange Liqueur (Brighter orange liqueur with brandy base and mandarin oranges) Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz Tropical kettle sour (Alvarado’s Falkor’s Fruit with passionfruit and dragonfruit is excellent, but choose your local favorite). Garnish with a swizzle stick #weekendtiki
