A refined, yet tropical, take on a Manhattan from the always great Lost Lake in Chicago The richness of the pineapple, the sweet cane from the agricole, the butterscotch notes from the Reposado tequila, and the cocoa notes from the vermouth and bitters blend together seamlessly while the Cynar provides a slightly bitter undertone 1 oz Reposado Tequila .5 oz Aged Agricole Rhum (Clement VSOP is a favorite but Neisson also makes a good version) .5 oz Plantation Stiggins’ Fancy Pineapple Rum .5 oz Sweet Vermouth (a Spanish style like Lustau or a version with a bit of sherry in the base like Lo Fi works best) .25 oz Cynar 2 dashes Chocolate Mole Bitters (several versions around) Stir with ice, strain into double rocks glass with a large ice cube. No garnish
