Scholar’s Mate

A rich, bittersweet Manhattan riff from bartender Tiffany Nahm with flavors that evoke apple orchards or coffee by the fireplace 🥃🍁🍎☕️
The blend of aged apple brandy and an Amaro with medium bittersweet notes (Amaro Nardini) forms a complex base with notes of dark chocolate, coffee, subtle menthol along with apple and subtle honey notes. Coffee liqueur helps tie together the bittersweet flavors and adds body while a pour of smoky Islay scotch adds touches of smoke and sherry that helps tie everything together. The coffee whipped cream topping adds some balancing richness and texture
1.25 oz Amaro Nardini (Italian Amaro with notes of milk chocolate, menthol and medium bittersweet finish)
1 oz aged Apple Brandy (Clear Creek 8 yr; St George Apple Brandy, etc)
.5 oz Coffee Liqueur (St George NOLA, Mister Black, etc)
.25 oz Islay Single Malt Scotch (Caol Ila 12
yr is really nice but Laphroaig 10 yr, Laguvulin 8 yr, etc all are good options as well)
Stir with ice and strain into a chilled coupe. Top with a few barspoons of homemade coffee whipped cream (beat heavy cream until starting to thicken, add 1/2 Tbsp brown sugar and Tsp coffee liqueur) and garnish top of the cream with freshly grated nutmeg
