A rum based take on the pre-prohibition classic with boosted notes of molasses and island spice in this full flavored sipper The notes of molasses, caramelized sugar, ripe banana/pineapple in the blend of runs works nicely with the splash of Fernet to add a touch of bittersweet complexity while the bitters bring refreshing notes of lime zest, ginger, and allspice 1.5 oz Blended Aged Jamaican Rum (Doctor Bird, Appleton Reserve, Worthy Park 10 yr) .5 oz Blended Aged Demerara Rum (El Dorado 12 yr is nice; Hamilton Demerara also works) .25 oz Fernet (Bittersweet Italian Amaro; Contratto and a few others offer a more nuanced, less bruising take than the more widely available Fernet Branca) Tsp Rich Simple Syrup (2 parts unrefined sugar of choice to 1 part water; stir until dissolved) 1 dash Scrappy’s Lime Bitters 1 dash Bittercube Jamaican Bitters #1 Stir with ice and strain into a chilled double rocks glass with a large ice cube. Garnish with the essential oils from an orange twist (discard the twist after)
