Royal Peacock

A refreshing, tropical highball from NYC rum expert Dani DeLuna (recipe slightly tweaked) that brings a bit of smoke and heat 🦚🥭🌶 The smoke and tropical fruit notes in the mezcal tease out the earthy notes in the unaged agricole rhum. The mango boosts the tropical notes and works with passionfruit liqueur to bring a nuanced, juicy flavor that works well with the tart lime juice and base spirits. The addition of habanero shrub and a chile-salt rim adds a spicy finish 1 oz Unaged Agricole Rhum (Neisson, Rhum JM, La Favorite, etc) .5 oz Mezcal (Espadin variety) .5 oz Mango Eau de Vie (Rhine Hall; can also use .75 oz of mango juice instead (use 1.5 oz Agricole and .5 oz lime in that case) .75 oz Fresh Lime Juice .25 oz Simple Syrup (1:1) 1 dash Bittermens Hellfire Habanero Shrub Shake with ice and strain into a chilled Collins glass with ice where the rim of the glass has been rubbed with a lime and coated with Taijin (or similar chile-salt mix).
