Rolling Down The Hills

A Daiquiri/Fizz variation that works in rhubarb and strawberry 🍓 inspired by the Cane Jane at PCH in SF
The rhubarb and citrus lend a tart, refreshing note to counterbalance the molasses and sugarcane notes in the rums while the strawberry liqueur bridges the flavors and the cardamom bitters bring a bit of spice and intrigue
1.5 oz Lightly Aged Jamaican Rum (Doctor Bird is a great option)
.5 oz Barrel Aged Cachaca (Sugar cane rum from Brazil with tropical fruit and oak notes)
.5 oz Fresh Lemon Juice
.5 oz Fresh Grapefruit Juice
.5 oz Rhubarb Syrup (2 parts rhubarb juice: 1 part granulated sugar)
.25 oz Rhubarb Amaro (Amaro Sfumato or Zucca)
.25 oz Strawberry Liqueur
1 dash Scrappy’s Cardamom Bitters
Shake with ice and strain into a chilled Collins glass with a few ice cubes. Top with 1.5 oz Club Soda and garnish with a swizzle stick
