Red Ships of Spain

A decadent, bittersweet Manhattan riff with notes of berries, nuts, coffee, and dark chocolate fit for Mr Robert Goulet himself The molasses, dark fruit, and coffee notes in the two rums work very well with both the berry notes in the raspberry liqueur and the nuttiness of the Spanish Brandy aged in sherry barrels while the Hungarian amaro adds a nice bittersweet note and the cocoa/coffee bitters tie everything together and the spritz of Islay scotch gives a slight smoky aroma 1 oz Blended Aged Rum (Diplomatico Extra Reserva, El Dorado 12, etc) .5 oz Brandy de Jerez (Spanish Brandy aged for 12-15 years in ex-sherry barrels that lend a rich, nutty flavor accent) .5 oz Overproof Dark Rum (Plantation OFTD, Lemonhart 151, etc) .375 oz Zwack (Hungarian amaro with bittersweet flavor and hints of cocoa, orange peel) .375 oz Raspberry Liqueur (St George, Giffard, etc) 2 dashes Chocolate or Cocoa and Coffee Bitters Stir with ice and strain into a chilled coupe. Garnish with a spritz of Islay scotch (if don’t have an atomizer, can rinse chilled glass with .25 oz and reserve the rinsed amount to sip later)
