A refreshing, slightly tart beer cocktail with rhubarb and 🍓
Campari (or your favorite red Aperitivo) is an excellent foil for berry flavors and rhubarb (from both a rhubarb-juice containing syrup and a smoked rhubarb Amaro) also complements these flavors. Citrus and Sour Beer with passion fruit notes bring tartness and bubbles and a bit of mint brings a pleasant aroma .75 oz Aperitivo of Choice (Campari/St George Bruto/Leopold)
.25 oz Amaro Sfumato (smoked rhubarb amaro, Zucca would also work)
.5 oz Fresh Lemon Juice
.25 oz Fresh Grapefruit Juice
.5 oz Rhubarb Syrup (2 parts freshly juiced rhubarb: 1 part granulated sugar; stir until blended)
.5 oz Strawberry Liqueur (Giffard)
Pinch of Salt
Shake with ice and strain into a chilled Collins glass with several ice cubes. Top with 1.5 oz of Gose (Modern Times Fruitlands has nice passion fruit notes). Garnish with a sprig of mint and a hulled strawberry
