Red Hook Criterium

A refreshing, low ABV highball with grapefruit and rhubarb from St John Frizell of Brooklyn’s Fort Defiance
The citrus brightness of fresh grapefruit and lemon juice work very well with the lightly bittersweet rhubarb amaro with a bit of gin helping solidify the backbone and club soda providing effervescence
1.5 oz Rhubarb Amaro (Amaro Sfumato pictured, but Zucca might be easier to find and works equally well)
.5 oz Gin
1.5 oz Fresh Grapefruit Juice
.5 oz Fresh Lemon Juice
.5 oz Simple Syrup (1 part granulated sugar: 1 part water; cinnamon syrup could be an interesting sub)
Pinch of salt (makes citrus flavors pop)
Shake with ice, strain into chilled Collins or highball glass with a few ice cubes. Top with 1.5 oz Club Soda. Garnish with a grapefruit twist
