A layered, slightly savory Old Fashioned riff from Matthew Belanger meant to evoke the flavors of tacos al pastor 🥃🌮🍍
The combination of Blanco tequila and mezcal results in a base with notes of citrus zest and smoke while splashes of green chile vodka and green Chartreuse add savory notes of cilantro, poblano, jalapeño and other herbs. The addition of pineapple liqueur adds the pop of pineapple found in al pastor while dashes of Orange and Habernero bitters add some additional citrus and spice notes. This is a masters level culinary cocktail!
1.25 oz Blanco Tequila (El Tesoro, Tapatio, Fortaleza, etc)
.5 oz Mezcal (Espadin variety; Del Maguey San Luis Del Rio brings a nice balance of smoke and citrus zest that is great here)
.25 oz St George Green Chile Vodka (delicious, savory infused-vodka with cilantro and green chile notes)
.25 oz Pineapple Liqueur (can also use pineapple gomme syrup)
Tsp Green Chartreuse
1 dash Orange Bitters (I like to mix the juicier Angostura Orange with the more spice-forward Regan’s Orange)
1/2 dash Bittermens Hellfire Habanero Shrub
Stir with ice and strain into a double rocks glass with a large ice cube. No garnish
