Rancho Relaxo

A refreshing, tropical highball/beer cocktail with notes of guava, citrus, and vanilla 🍹
The reposado tequila and rye whiskey provide a base with notes of vanilla and subtle baking spice that helps highlight the flavors of the guava (from the guava syrup and guava gose) and lime. A splash of Licor 43 and a dash of Jamaican Bitters helps boost the vanilla notes while adding a bright floral touch
1.25 oz Reposado Tequila (El Tesoro, Siembre Valles, Arette, etc)
.75 oz Rye Whiskey (New Riff Rye is bottled in bond and has nice vanilla and baking spice notes)
.75 oz Fresh Lime Juice
.5 oz Guava Syrup (chop a 1 inch by 3 inch piece of guava paste into cubes and simmer with 1/2 C each granulated sugar and water; stir until guava paste and sugar have dissolved)
.25 oz Vanilla Liqueur (Licor 43 or Giffard; can also use vanilla syrup)
1 dash Bittercube Jamaican #2 Bitters (hibiscus and grapefruit zest)
Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz Guava sour beer. Garnish with a swizzle stick
