A layered, refreshing Daiquiri riff from Alec Bales of Atlanta’s Ticonderoga Club with notes of roasted pineapple and floral honey 🍍🍯 The blended lightly aged rum provides a sturdy base with tropical fruit aromas that work nicely with the roasted pineapple notes in the liqueur and the herbal and floral honey notes of the Benedictine while the lemon brightens the drink and contributes refreshing acidity and the pinch of salt and lime bitters bring the flavors together 1.5 oz Blended Lightly Aged Rum (Plantation 3 Star, Probitas, Royal Standard, etc) .75 oz Fresh Lemon Juice .5 oz Pineapple Liqueur or Cordial (Giffard for former; roast 1/4 cup pineapple and add to 1/2 C each granulated sugar and water and steep for 15 minutes on low heat for latter) .25 oz Benedictine (French liqueur with notes of honey and saffron) 1 dash Scrappy’s Lime Bitters Pinch of salt Shake with ice and strain into a chilled coupe.
