Port Royal

A spicy, savory daiquiri variation that is a Smuggler’s Cove classic (and probably the first variation of this drink that knocked me off my feet)
The savory notes from the allspice, nutmeg, thyme, and cinnamon are perked up with a healthy dose of cayenne spice in the Jerk Syrup while citrus and a duo of aromatic Jamaican rums join forces to pack a flavorful punch
1.5 oz Blended Lightly Aged Jamaican Rum (Appleton Signature/V/X is the best choice)
.5 oz Wray & Nephew Jamaican Overproof Rum
.75 oz Fresh Lime Juice
.75 oz Jerk Syrup (4 parts granulated sugar:2 parts water: 1 part mix of ground thyme, allspice, cayenne, cinnamon, black pepper, nutmeg, and salt (hit me up if you want more precise Jerk seasoning proportions), simmer on med/low heat 5 minutes and strain to remove solids)
5 drops Habanero or Hellfire Bitters (Bittermens, Scrappy’s, etc)
Shake with ice, strain into chilled coupe. No garnish
