A Don the Beachcomber Tiki classic that is a drier, funkier riff on the even more classic Planter’s Punch featuring some Haitian rhums 🏝🍹 The grassy funk of the Clairin is smoothed our with a bit of aged sugarcane rum and works nicely with the tropical fruit notes of the pineapple and lime juices and the island spices of clove and allspice from the falernum and Angostura while the touch of pomegranate molasses (grenadine is the original call) brings a hint of funky tartness that helps bridge the flavors 1 oz Clairin (Haitian sugarcane based rhum; an unaged agricole is probably the closest sub .5 oz Aged Haitian Rhum (Rhum Barbancourt 5 star; column still aged rum like Don Q Anejo is probably the closest sub) .5 oz Fresh Lime Juice .5 oz Fresh Pineapple Juice .5 oz Falernum (rum-based liqueur with clove and lime zest from Barbados; John D Taylor) .25 oz Rich Simple Syrup (2 parts unrefined sugar of choice to 1 part water; stir until dissolved) 1/8 tsp pomegranate molasses (or 1 dash grenadine) 1 dash Angostura Bitters Shake with ice and strain into a chilled footed pilsner glass with crushed ice.
