Popeye Doyle

A showstopping, indulgent Old Fashioned riff from Tyson Buhler for the excellent Death & Co in NYC 🍒🥃
The malt, peat, and almond notes in the scotch pair very well with the cherry notes from the Heering and cherry funk of the Kirsch along with the almond biscotti sweetness of the amaretto. The sherry cask aged rum adds some additional oomph and nutty sherry flavor. Tastes like some wonderful Italian cherry/almond cannoli with slight smoke notes
1 oz Campbelltown Single Malt Scotch (Springbank 10 is spectacular, could try subbing some blend of an Islay and Speyside, but easier to go straight for the source)
.75 oz Sherry Cask Aged Rum (Foursquare Premise, Navazos Palazzi Oloroso, etc; might be able to sub El Dorado 15 and a barspoon of Oloroso)
.75 oz Amaretto (want something with actual Sicilian almonds like Caffo Amaretto or Lazzaroni; Disarrono and others are now using artificial flavoring)
.25 oz Cherry Heering (Danish brandy-based cherry liqueur)
.25 oz Kirschwasser (Central European cherry eau de vie with plenty of funky bite; Clear Creek makes an excellent version)
Stir with ice and strain into a chilled double rocks glass with a large ice cube. Garnish with a few brandied cherries on a pick
