Pineapple Daiquiri

My modification of excellent NYC rum bar BlackTail’s 🍍daiquiri for home consumption
To boost the pineapple flavor from the Liqueur (and to replace the need to use regular or sous-vide infusion of pineapple into the rum), I’ve split the rum base to a mix of blended lightly aged rum (staple of the drink), some tasty pineapple rum from Plantation, and some funky Overproof rum for additional tropical flavors and aromas to go with the refreshingly tart lime juice
1.5 oz Blended Lightly Aged Rum (Cana Brava, Plantation 3 Star, El Dorado 3 yr, etc)
.5 oz Plantation Stiggins’ Fancy Pineapple Rum
.5 oz Overproof Rum (Rum Fire; Wray & Nephew can sub, but it’s not quite as aromatic)
1 oz Pineapple Liqueur (Giffard; can also sub a pineapple syrup of choice)
.75 oz Fresh Lime Juice
Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Feel free to garnish with a pineapple frond if handy
