Peanut Butter Old Fashioned

A comforting, full-flavored Old Fashioned riff from drinks whiz Nico de Soto that evokes memories of a delicious PB&J while using more modern drink techniques 🥃🥜🍓 The mouthfeel/aroma/flavor of the whiskey are adjusted/imbued with notes of peanut butter using a technique called fat-washing (this specific offshoot uses an old perfume industry technique called enfleurage) that works very nicely with the barrel spice and nutty notes in the background of bourbon. When paired with some strawberry liqueur and few dashes of bitters, the result is a comforting and delicious treat 2 oz Peanut Butter Fat-Washed Bourbon (in a solid container, spread an even, relatively thin layer of peanut butter (1/4-1/8 inch thick) and carefully pour measured volume of bourbon over the top of this layer; seal top of container tightly with plastic wrap and incubate overnight; pass liquid through coffee filter before using in drink; You can scale down from ratio of one 16-ish oz jar of peanut butter: 1 bottle bourbon) .25 oz Strawberry Liqueur (Giffard; can also make own strawberry syrup) 2 dashes Angostura Bitters Stir with ice and strain into a chilled double rocks glass with a large ice cube. Garnish with a hulled fresh strawberry (if handy)
