A layered, flavorful Daiquiri riff with guava and vanilla accents The vanilla and caramelized sugar accents in the column still aged rum works wonderfully with the guava and fruit notes in the infused apple brandy and the cherry and vanilla notes in the liqueurs. The caraway notes in the aquavit and black pepper/bay leaf notes in the bitters add some complementary spice notes, and the lime adds needed acidity to keep all of the other flavors in balance 1 oz Column Still Aged Rum (An aged Panamanian Rum like Ron Abuelo or Cana Brava 7 has the flavors that work well here) .5 oz Aquavit (An aged aquavit like Linie is more complementary than Krogstad, Aalborg, etc) .25 oz Guava-infused Bonded apple brandy (Cut a 2 in x 3 in section of guava paste into small cubes and infuse into 4 oz of Bonded Apple Brandy (Laird’s) for 2-3 days with occasional shaking; strain out remaining guava paste) .25 oz Maraschino Liqueur (Luxardo) .75 oz Fresh Lime Juice .5 oz Vanilla Liqueur/Licor 43 .25 oz Simple Syrup (1:1) 1 dash Bitter End Chesapeake Bay bitters Shake with ice and strain into a chilled coupe.
