Pancho Villa

An updated version of the Filipino classic tropical punch from NYC restaurant Jeepney featuring flavors of citrus, tropical and stone fruits and rum 🍹 🍒🍍
The molasses and caramelized sugar notes combine with a splash of juniper and other spices in the gin to create a flavorful base that works in harmony with the fruit flavors from the liqueurs (apricot and cherry) and fruit (pineapple and lime). A splash of soda water lengthens the drink and adds effervescence. Very refreshing and pairs well with savory food
1.5 oz Blended Aged Rum (a Solera style rum from Venezuela like Santa Teresa 1796 or Diplomatico works well)
.5 oz London Dry Style Gin (Bombay Sapphire, Four Pillars, etc)
.5 oz Apricot Liqueur (Rothman & Winter or Giffard)
.25 oz Cherry Brandy (Cherry Heering)
Tsp Maraschino Liqueur (Luxardo or Leopold Brothers)
.75 oz Fresh Pineapple Juice
.25 oz Fresh Lime Juice
Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 1.5-2 oz Soda Water (LaCroix Key Lime helps reinforce citrus notes). Garnish with a swizzle stick or pineapple leaf and a lime wheel
