A delicious, nuanced Sour variation from Joaquin Simo during his stint at Death & Co The chamomile notes from the softer Old Overholt rye infusion works very well with the honey and cereal notes of the Irish malt. The amaro adds softer botanicals and a bittersweet note and the lemon brightens up the drink 1.5 oz Irish Whiskey (Aged Irish malt like Knappogue Castle 12 works best) .5 oz Chamomile-infused Old Overholt Rye (1/4 cup chamomile tea per 750 mL bottle; can scale up or down; infuse 90 minutes with occasional stirring, strain back into bottle) .5 oz Amaro Meletti (Italian Amaro with cola and soft botanical notes) .75 oz Fresh Lemon Juice .5 oz Rich Simple Syrup (2 parts unrefined sugar: 1 part water; can sub Cane Syrup if available) Shake with ice and strain into chilled coupe or fizz glass.
