O’Tay

A tart, juicy beer cocktail that takes advantage of the complementary flavors of berries, rum, lime, and coffee
The berry flavor in the liqueur and juicy bitter notes of the Aperitivo accentuate the berry flavor in the delicious Tayberry (cross between raspberry and blackberry) kettle sour while the molasses/coffee/dark fruit notes from the rum and coffee liqueur provide a dark base with complementary flavors while the lime adds brightness and the honey syrup rounds out the flavors
1 oz Blended Aged Rum (Hamilton Demerara, Diplomatico Extra Reserva, El Dorado 8, etc work)
.5 oz Red-Hued Aperitivo of choice (Campari, Bruto Americano, etc)
.25 oz Raspberry Liqueur (St George, Giffard, etc)
.25 oz Coffee Liqueur (St George NOLA, etc)
.5 oz Fresh Lime Juice
.25 oz Honey Syrup (2 parts honey:1 part warm water)
Pinch of salt
Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Top with 1.5-2 oz of Tayberry (raspberry or blackberry would also probably work) Kettle Sour beer. No garnish
