One Trick Pony

A funky, tropical beer cocktail to transport you from the oncoming winter cold The tropical sweet/tart notes of the delicious guava IPA are backed by the grassy rum funk of the Haitian sugarcane rum while the Mezcal lends a hint of smoke, the coconut liqueur and honey combo lend a deep tropical sweetness, the bitters add a hint of Allspice and clove, and the lime brings a refreshing acidity 1.5 oz Clairin (Haitian sugarcane rum with a complex grassy funk, unaged Agricole is closest sub) .5 oz Mezcal .75 oz Fresh Lime Juice .5 oz Honey Syrup (2 parts honey: 1 part warm water) .25 oz Coconut Liqueur (Kalani is best) 1 dash Jerry Thomas’ Decanter Bitters or Dale DeGroff Pimento Bitters Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Top with 1.5 oz of guava IPA (can probably sub an equal mix of hazy IPA and Bundaberg Guava Soda if no brewery nearby makes this relatively rare beer option) #weekendtiki
