A funky, tropical riff on the tea/citrus/spirits template of the original 18th century Punch from NYC’s Shannon Mustipher 🏝🍍🍵 The ripe tropical fruit notes in the pot still Jamaican rum combine with the fruit and caramelized sugar notes in the cognac, and earthy funk of the Batavia Arrack to yield a flavorful base that allows the tropical and floral notes of the pineapple and grassy notes in the green tea syrup to shine. The orange peel notes in the Orange curacao and tart lemon juice help balance the flavors and brighten the drink
1.5 oz Pot Still Jamaican Rum (Hamilton Pot Still, Smith & Cross, etc)
.5 oz Cognac (Bouju has nice fruit flavors that work well with citrus)
.25 oz Batavia Arrack (Indonesian product distilled from molasses and red rice; an original punch ingredient)
.25 oz Orange Curacao (Pierre Ferrand Dry is a good choice)
.75 oz Green Tea Syrup (brew 4 oz of green tea of choice; add equal volume of granulated sugar and stir until dissolved)
.25 oz Fresh Pineapple Juice
.5 oz Fresh Lemon Juice
Shake with ice and strain into a chilled double rocks glass with crushed ice
