Not Just Knee Deep

A full-flavored yet refreshing funky beer cocktail meant to evoke a cherry-like rickey from a soda fountain 🍒⛲️
The combination of vanilla notes in the bonded rye whiskey and an Amaro with cola notes creates a base that pairs incredibly well with the notes of tart cherry and oak from the barrel aged saison. The lime juice helps boost the tart notes while a splash of maraschino liqueur, cherry bark vanilla, and a touch of toasted coconut syrup help boost the cherry and vanilla notes while also rounding the edges of the drink. A touch of black cherry and some helpful bitterness is added by the Amargo-Vallet. Absolutely delicious!
1.5 oz Bonded Rye Whiskey (Rittenhouse, New Riff both great choices)
.5 oz Amaro Meletti (mild bittersweet Amaro with cola and spice notes)
.5 oz Fresh Lime Juice
.25 oz Maraschino Liqueur (Luxardo or Leopold Brothers)
.25 oz toasted coconut syrup (toast 1/4 C shredded, unsweetened coconut on medium low heat until golden brown and fragrant; add to 1/2 C unrefined sugar of choice and 1/4 C water; stir until sugar has dissolved and strain out coconut)
Tsp Amargo Vallet (Mexican Amaro with prominent bitter notes along with some black cherry flavor)
1 dash Bittercube Cherry Bark Vanilla bitters
Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz barrel aged sour beer with cherries (Russian River Funky Foeder pictured; a nice Kriek would also work). No garnish
