A refreshing, bittersweet hybrid Paloma/beer cocktail riff with citrus, floral, and subtle smoke notes for enjoyment on a long holiday weekend 🍹😎
The blend of unaged Blanco tequila and mezcal provides a base with notes of citrus zest, black pepper, and subtle smoke that works nicely with the bittersweet grapefruit notes in the liqueur and the grapefruit Gose beer. The deep yet floral sweetness of the honey syrup helps lend body while fresh lime juice adds some zip and helps bridge all of the flavors. Dashes of yuzu and grapefruit and hibiscus bitters help highlight the grapefruit flavor, while the beer adds effervescence and a pinch of salt helps the flavors pop
1.5 oz Blanco Tequila (100% agave; Tapatio, El Tesoro, etc)
.5 oz Mezcal (Espadin variety; Del Maguey San Luis Del Rio works nicely here)
.5 oz Fresh Lime Juice
.5 oz Honey Syrup (2 parts honey: 1 part warm water; stir until honey is fully integrated)
Fat .25 oz Grapefruit Liqueur (Giffard)
1 dash Bittercube Jamaican Bitters #2 (grapefruit peel and hibiscus notes)
1 dash Miracle Mile Yuzu Bitters
Shake with ice and strain into a chilled Collins glass with ice cubes. Top with 2 oz of a Gose-style beer (a grapefruit Gose; Pure Project Evangeline pictured). Garnish with a swizzle stick
