Naked in the Desert

A refreshing riff on Joaquin Simo’s own hybridization of the Last Word and Paper Plane from Mexico City’s Diego Valencia
Swapping the earthier, less smoky Sotol in place of a smoky mezcal (Del Maguey Chichicapa) allows the tart notes of the Aperol and lime juice to shine while the Chartreuse adds an intriguing herbal sweetness that plays nicely with the Sotol .75 oz Sotol (Northern Mexican desert spirit from the Desert Spoon plant)
.75 oz Aperol (Italian Aperitivo that is a bit sweeter and has a bit more blood orange flavor vs Campari)
.75 oz Yellow Chartreuse (lower ABV cousin to the more famous Green Chartreuse)
.75 oz Fresh Lime Juice
Shake with ice and strain into a chilled double rocks glass with a few ice cubes. Garnish with 6 drops of Angostura bitters and a grapefruit twist
