Mountain to Sound

A bright, refreshing Daiquiri riff showcasing the pairing of the uniquely sweet/tart flavor of kumquats with funky rum and a hint of mango 🍊🥭🍹 The combination of a funky lightly aged blended rum (combines Barbadian column still and Pot Still Jamaican rum) with aged rhum agricole results in a base with notes of citrus zest, sugarcane, and vanilla custard. These flavors work in great harmony with the bright tart/sweet flavor of the kumquat (present in a zippy cordial) and the fresh lime juice. A splash of mango eau de vie helps bridge the citrus and funk with some ripe mango notes while the tajin half rim adds a bit of spice to each sip 1.25 oz Lightly Aged Blended Rum (Foursquare Probitas is a great choice; Plantation 3 Star, El Dorado 3 year, etc can sub) .5 oz Aged Rhum Agricole (Clement VSOP, Neisson Eleve Sous Bois, etc) .25 oz Rhine Hall Mango Eau de Vie (incredibly delicious mango brandy from excellent Chicago distillery) .75 oz Fresh Lime Juice .5 oz Kumquat Cordial (thinly slice 1/2 C kumquats and add to food processor or blender with 1 C granulated sugar, 1/4 C water, 2 Tbsp Fresh Lime Juice, 1.5 Tbsp Fresh Lemon Juice; pulse until kumquats have been largely incorporated; strain with fine mesh sieve and allow to sit a few hours before use) Shake with ice and strain into a chilled double rocks glass rimmed with tajin (dried chiles and citric acid)
