Miami Nice

A cooling riff on the Miami Vice (blend of pina colada and strawberry daiquiri) from The Beehive in SF that brings fruit, spice, and everything nice on a hot summer day 🥥🍹
The aged rum offers notes of vanilla and brown sugar that help accent the tropical flavors of coconut and guava while the lime adds some zip and citrus aroma and the allspice liqueur adds some complementary spice notes
Add the following to a blender:
1.5 oz Aged Rum (a Solera-style South American rum like Ron Zacapa or Santa Teresa 1796 are really good here, El Dorado 12 or similar Demerara could also sub)
1 oz Coconut Creme (equal parts unsweetened coconut milk and 2 parts granulated sugar: 1 part coconut water syrup, pinch of salt, blend until combined)
.75 oz Guava purée (can blend guava paste, warm water, splash of lime juice on low heat until guava paste has fully combined)
.5 oz Allspice Liqueur (St Elizabeth or Degroff Pimento)
.5 oz Fresh Lime Juice
1 cup ice (add this last)
Blend 15-20 seconds until smooth and then pour into chilled footed pilsner or snifter. Garnish with a lime wheel and cocktail umbrella
